Andrée-Adrienne Mallet-Maze dite La Mazille, cookbook author (1891-1984).
Using the Planèze (in Neuvic sur l’Isle) family home recipe cookbook, La Mazille wrote down the traditional recipes passed on orally that she could collect from her acquaintances in the 1920s. Published by Flammarion in 1929, La bonne cuisine du Périgord is the first cookbook devoted to Périgord gastronomy. The book, constantly republished, often offered to brides, shared the ancestral know-how of the art of « making the most of local products » and contributed greatly to the renown of Périgord cuisine.

Jean-Camille Fulbert-Dumonteil, food columnist (1831-1912)
This writer (born in Vergt, Périgord) and food columnist for Le Figaro, was the master of the art of good eating between 1860 and 1910. He was the one to name the truffle « black pearl of the Périgord« .
